Comfort and Joy Mac & Cheese

I created this recipe a few Christmases back as I was inspired to make a non-traditional Christmas Eve dinner…a ‘Comfort and Joy’ dinner. This is a delicious and rich dish of comfort food that certainly brings joy, especially given the fact that mac and cheese is one of my partner’s all-time favorite dishes. The one exception is your cardiologist…this does not bring him either comfort or joy.

Ingredients:


1 box macaroni, cooked
2 tablespoons olive oil
1/2 cup red onions, diced
1/2 cup celery, diced
1 stick butter
1/2 cup flour
1 quart half and half
4 cups extra sharp cheddar cheese, shredded
2 cups smoked ham, diced
1 1/2 cup Triscuits, shredded
4 tablespoons butter, melted
salt and pepper to taste

Directions:


Preheat oven to 350 F.

Prepare macaroni according to package directions, terminate cooking by rinsing with cold water.

Saute the onions and celery over medium heat until softened. Set aside.

In same pan, melt butter, add flour and whisk until smooth. Cook for about 2 minutes whisking frequently. Add half and half, about a half cup at a time, whisking in between additions. Whisk until mixture begins to thicken.

Add cheese, about a cup at a time, whisking until melted. Return onion and celery, add ham, and salt and pepper to taste.

Add macaroni to pan. Stir to combine. Pour mixture into large cast iron skillet or other heavy baking dish. Place shredded Triscuits in a bowl and toss with melted butter. Top with shredded Triscuits mixture and bake at 350 F for 30 minutes or until heated through and bubbly.
