This is a recipe for a delicious vegetarian dish. Eggplant with tomato and onion tastes so good that you won’t miss meat. Prep takes some time but it’s worth waiting. Serve with your favorite side dish. Great with quinoa.
Eggplant with onion
Prep time: 35 minsCook time: 25 minsTotal time: 1 hour
Ingredients
1 large eggplant
1 medium onion, chopped
2 tsp cooking oil (Note: grapeseed oil is healthier option for frying)
1 tomato, diced
3 cloves garlic, minced
salt, pepper to taste
2-3 chopped scallions (garnish, optional)
Instructions
Wash eggplant, cut into small cubes
Put into a colander over the sink, sprinkle with a pinch of salt and let sit for 30 mins
After 30 mins wash eggplant cubes under cold water, drain and set aside
Heat the oil in a skillet
Saute onions until golden
Add drained eggplants to the skillet
Fry with onions for 2 min
Add diced tomato (or substitute with a table spoon of pasta sauce)
Cook on medium heat for until tender, about 20 min
Add minced garlic and cook for additional 5 mins
Garnish with scallions or your favorite herb
