This is my own creation from years back. It is a departure from the typical grilled cheese sandwich and the flavors of the smoked and bleu cheeses combined with the apples is so unique. It is a cold weather staple in our house.
Serving Size: 2
Ingredients:
4 slices whole grain bread
smoked cheddar cheese, sliced
bleu cheese, sliced or crumbled
1/2 Granny Smith apple, sliced thin
butter, softened
Directions:
Preheat griddle to 375F. Spread one side of each slice of bread with butter. Place two slices, butter side down, on griddle. Add cheese slices and then apples. Top with remaining slices of bread, butter side up.
Grill each side of sandwich until golden brown and cheese is melted but apples remain crisp.
