Smoked Stuffed Peppers

A delicious stuffed pepper baked on the Big Green Egg for a delicate smoky flavor. Use ground turkey for a healthier alternative to the ground beef.

Serves: 4

Ingredients:


4 green bell peppers, tops removed and seeded
1 lb ground turkey
1/2 C chopped red onion
1 can diced tomatoes, with juice
1/2 C brown rice
1/2 C water
1 t Worcestershire Sauce
Smoked sea salt
Ground black pepper

Directions:


Place the hollowed out peppers in a microwave save dish, cover with plastic wrap and cook 3 minutes.

Chop enough of the reserved pepper top for about 1/4 C. Put the ground turkey, onion and green pepper into a large skilled and cook until turkey is lightly browned. Add tomatoes, water, rice, Worcestershire Sauce. Add salt and pepper to taste. Cover and simmer about 30 minutes until the rice is done.

While the meat and rice mixture is cooking, set up the Big Green Egg for indirect cooking, add a little apple (or other) wood. Stabilize temperature at 350 and let smoke turn from white to clear.

Fill the pepper shells with the meat and rice mixture and place in the egg to bake for 30 minutes or until peppers are tender.
