This one is easy and versatile. The beef is lean and, relatively speaking, healthy. You will need a very hot grill (I use the Big Green Egg) to keep cooking time to a minimum and the meat tender. Pair with sauteed Brussels sprouts or braised kale for a healthy, power-packed meal that’s worthy of company.

Ingredients:
1.5-2 lb flank steak
Dales Marinade (or other marinade of your choice)
Smoked sea salt
Black pepper, coarsely ground
Directions:
Place the flank steak in a dish and cover with marinade. Cover and place in refrigerator for 1 hour.
Prepare Big Green Egg for direct cooking and bring up to 700 F (be very careful when opening…burp the lid as recommended). Remove steak from marinade, pat dry with paper towels, season lightly on both sides with salt and pepper. Place on grill and cook for 1-2 minutes on each side. Remove from grill and cover with foil to rest for 5 minutes before sliding. To slice, cut in thin strips against the grain and arrange on plate with side dishes. Flank steak should ideally be served rare to no more than medium-rare.
